CFI - chief flying instructor (certified flying instructor in USA).
CH - compass heading.
Check 'A' - a thorough pre flight inspection the first of the day.

CFI homebuilt commandant number one says, "Thou shalt not do, nor say, what thou dost not knoweth to be fact." In other words, no B.S. allowed. If you don't know the airplane in question well, don't act as if you do.
While the CFI internship is valuable in the experience gained it can also lead to continued employment after graduation.

As for whether you should be looking for a high time grizzled old veteran, or a fresh CFI, that is a very difficult question to answer. More experienced instructors may be burned out, or less enthused than a low time instructor.
