Enrichment—The addition of vitamins and minerals to improve the nutritional content of a food.
Fermentation—A reaction performed by yeast or bacteria to make alcohol.

 


The 1930s saw the United States pursue a diet enrichment program to begin fortifying breads with vitamins and minerals after their discovery in the late 1920s.

Enrichment, on the other hand, is the addition of nutrients to foods to restore nutrients lost during processing.

Some nutrients are lost, most significantly fiber. Then, during the enrichment process, nutrients may be artificially added back in. But even after enrichment, the final product is likely to be less nutritious than the whole grains you started with.

It follows that for every ounce of good will we put out toward our fellow Earth citizens, we will receive more enrichment in return. This is so true! ...

You may find that white bread is higher in thiamin, riboflavin and niacin because of enrichment. Whole wheat bread will be higher in fiber and other trace minerals, which may or may not be listed on the label since they are not required by FDA.

Quite simply the exact combination of each vitamin, mineral and enzyme found in a whole food is what we are best adapted to. No amount of fortification or enrichment with other vitamins and minerals can provide what nature has already provided.

When we obtain adequate amounts of all essential nutrients, biological hunger ceases. If our foods are nutrient-deficient we may overeat until we get them which is one reason why nutrient enrichment is important for achieving a healthy weight.

To compensate for these losses, white flour is enriched with this vitamin. Riboflavin is not part of the vitamin enrichment mixture added to white rice because the addition of this vitamin imparts a yellowish cast.
