High-glycemic: A food is considered to be high-glycemic if it is broken down rapidly and enters the bloodstream quickly as glucose.

High-glycemic-index foods trigger strong insulin responses, thereby exposing the body to all the negative effects of insulin. By comparison, low-glycemic value foods do not provoke this insulin response.

- Eliminate high-glycemic foods.
- Eat only low-glycemic foods such as lean meat and certain fruits and vegetables within the daily formula of 40% to 50% carbohydrates, 30% protein, and 30% fat.
- Eat fruit by itself, preferably only once a day.

But among the high-glycemic foods encouraged to be eaten sparingly in the Atkins plan -- if at all -- are oranges, bananas, potatoes, and other foods considered to be a good source of nutrition by other experts.

You should also have two snacks, each with up to half a cup of snack mix plus a piece of fresh fruit. During phase 2 you can reintroduce legumes, dairy, grains, and other high-glycemic-index carbs.
