APPLE JACK COCKTAIL
2 oz. Calvados or Apple Jack
3/4 oz. Orange Curacao
2 dashes Orange Bitters.
Shake ingredients with ice and strain into chilled martini glass. Garnish with thin slice of apple and orange peel.

Description
Generic for the first New World-native distilled spirit, first produced in the 17th century by English or European settlers in America. Currently it is often (but not always) blended with neutral spirits.

Put honey in a warmed, heat- proof mug and add enough boiling water to dissolve honey. Add bitters, apple jack, and fill with boiling water. Garnish with lemon peel and cinnamon stick.

They use whole tree ripened apples and naturally occurring yeasts to ferment the apples, which are then pot distilled and aged in charred oak barrels for 12 years. They also produce a 7 1/2 year-old Apple Brandy and a blended Apple Jack.
