Lemon Peel - The skin of the lemon. Often used as a garnish.
Lemon Syrup - A mixture of sugar dissolved in water and flavoured with lemon.

 


Lemon Peel
Glass type: Old Fashioned
Directions: Chill tow old fashioned glasses with crushed ice. Remove ice from one glass and in it place a sugar cuibe with a little water.

Mixing instructions:
Mix all ingredients, except lemon peel, with cracked ice in a shaker or blender. Strain into a chilled cocktail glass, twist lemon peel over drink, and drop into glass.

Shake all ingredients (except lemon peel) with ice and strain into a cocktail glass. Add the twist of lemon peel and serve.

1 oz. Cruzan Light rum

Remove the lemon peel carefuly, retaining a minimum of the white pith on the peel. Juice the lemons and set aside the juice. Muddle the lemon peels and simple syrup for a couple of minutes to extract the oil from the peel.

Add a cherry and lemon peel squeezed on top.
Serve in a cocktail glass (4.5 oz)

Put all spices and lemon peel in a double-thick cheesecloth bag. Tie it well.

Martini 3 oz Beefeaters gin 1 oz dry French vermouth Lemon peel Put the gin in the freezer and the vermouth in the fridge overnight. Also chill the shaker and frost the glasses.

Stud the strips of orange and lemon peel with 2 cloves each and place them in a frying pan or chafing dish with the stick of cinnamon and the 2 teaspoons of sugar.

Lemon Twists: Although I've occasionally seen an experienced barman cut a lemon twist from a lemon peel, most establishments prepare lemon twists en-masse.

Put into gallon or half-gallon jar the spirits, thin lemon peel, orange juice, and sugar. Now take the essence of bitter almonds (you can use any amount you please) and add it to the glass of milk. Mix thoroughly and pour into the jar.

Pour 2 oz. carbonated water into a collins glass. Add powdered sugar and stir. Add ice cubes and apple brandy. Fill with carbonated water a nd stir again.

Add all the ingredients to a cocktail pitcher, including the lemon peel. Add 2 handfuls of ice. Stir vigorously (40 stirs should do it). Strain into an ICED cocktail glass and serve immediately, with NO garnish.

Orange or lemon peel
Into a collins glass put the lime juice, powdered sugar, carbonated water and stir. Add ice cubes and Burnett's Gin. Fill with ginger ale and stir again. Add spiral of orange or lemon peel and dangle end over rim of glass.

An Italian liqueur obtained by infusing fresh lemon peels (of the "Sfusato Amalfitano" variety). This is suitably sugar-sweetened to give a flavour very much like potent (30% alcohol) and strongly-flavoured lemonade. Nice, and nicely packaged.

Classic Martini recipes are traditionally garnished with an olive or with lemon peel. Using an onion as a garnish makes the drink a Gibson.

Mix lemon peels, juice, and sugar until sugar is dissolved, then add to water. Add brandy and 1 bottle of wine. Place sealed container in storage for 5 weeks. Then strain mixture into a punch bowl with a block of ice and add wine. Serves about 30.

KANGAROO COCKTAIL
½ Oz. Vodka
¾ Oz. dry Vermouth
twist of lemon peel
Stir vodka and vermouth with ice and strain into a chilled cocktail glass or into an Old-Fashioned
glass over ice cubes. Garnish with lemon peel.

Wipe inside of chilled cocktail glass with twist of lemon peel and then wet the inside with a few drops of lemon juice and toss out. Shake ingredients with ice and strain into prepared glass. Serve with maraschino cherry.

Sweet and Hot recipe
Heat in a heat-resistant glass, add a twist of lemon peel and a clove, and serve
