Mace

Mace - Spice made from the dried outer casting of the nutmeg.
Mad Melon Watermelon Schnapps - The brand name of a schnapps flavoured with melon and watermelon.

Method :
Shell cooked shrimps, boil washed shells barely covered with water for 1/2 hour.
Strain, poach skinned haddock in liquid for about 10 minutes until cooked.
If shrimps were bought unshelled, poach fish in water.

Taste: Medium-weight mouth feel (for a scotch). Orange honey, toffee, cinnamon or mace, slight alkali tang like a good dark chocolate. Lingering, warm finish like a good sherry.

Add the chopped pineapple, light rum, anejo rum, dark rum, pineapple juice, orange juice, nutmeg, cinnamon, mace, allspice and club soda. Stir well. Add one large block of ice. Garnish with pineapple slices. Makes 35 (6-ounce) punch cups.
