At one time the largest open pit copper mine in the world, the pit is more than one mile deep.
Typically a marinated green olive, without pit, or with "pimento", garlic, almond, or any one of a number of ever-increasing varieties of stuffing. The pimento or pimiento is the berry from which the spice allspice is derived.
Rather than being mass-produced factory products, they're still produced in villages using traditional techniques - the agaves are pit-roasted, wheel-ground by animal power, and fermented and distilled in the old style.
