Sauternes - A white wine produced in the South-West of France. Its alcohol content must be 13% minimum. It is quite a sweet and delicious wine, perfect for desserts.

In natural-wine making the grapes are gathered when fully ripe (sometimes, as for Sauternes, when overripe). Mechanical extraction of the juice, called must, has almost entirely replaced treading, the traditional method.
Characteristics: The grape is well known in France for making the sweet wines of Sauternes although in other parts of the world, it is made as a dry white wine. It is also a common blending partner with the Sauvignon Blanc in Bordeaux.
