The first time I tried this a few days ago it tasted like burnt seaweed but this time at a different bar and at a lower price this turned out better.

If you want it to have 'seaweed', poke a couple of pieces of purple endive or something similar down into the gravel. When the whole thing starts to jell, use a wooden skewer to push gummi fish into different parts of the bowl.
