Take the butter and roll the wedges, one at a time in the herb mixture, making sure all sides are well coated.
4. Take a piece of chicken and place smooth side DOWN on working surface.
Squeeze a large wedge of lime over the vodka and then toss the wedge in as well. Fill with the ginger beer. Ginger beer is much tarter and has more flavour than ginger ale. The copper mug is traditional for this drink.
Spear a pineapple wedge with a cocktail pick and lay the wedge over the top of the glass. Tuck a mint sprig into the drink to complete the garnish.
