Herbs are aromatic plants used to add flavor to a dish. They also have medicinal properties. Leaves of the plant or the whole plant are used to flavor dishes.

Herbs are aromatic, beautiful and "nature's miracle plants." However, herbs have their own "dark side" just like everything else in this binary system of light and dark, good and evil.

Lavender is an aromatic herb. It's grown for it's scent. Gardeners love to grow Lavender for both its sweet scent and it's attractive flowers. It is a member of the Mint family, and native to the Mediterranean and northern Africa.

Catmint, is an aromatic herb that is commonly grown in the garden. It produces clusters of lavender-blue flowers amid mounds of gray-green foliage. This easily grown plant has an interesting history regarding its various uses in the landscape.

Some of the most aromatic plant ingredients for potpourri besides the ones already mentioned include bay leaves, camomile flowers, cloves, lemon verbena leaves, marigold petals, rosemary leaves and sassafras root bark.

Tips for Planting Aromatic Herbs
If you are new to planting and cooking with herbs, then there are a few tips you should know before venturing out with these aromatic and delicious plants.

From warmer climes, aromatic and drought-tolerant Mediterranean species such as lavender, rosemary, bay and fennel, thrive on these soils, with the bonus of not needing constant watering.

Basil has broad, dark green aromatic leaves that can be grown from seed. It should be started indoors in early spring (May) or sown directly in the garden after danger of frost has passed. Basil needs warm soil and temperature to germinate.

Garden thyme, fresh or dried, alone or combined with parsley and bay leaves to make a bouquet garni, adds a distinctive aromatic flavouring to meats, poultry, stews, sauces, and stuffing.

More popularly, herbs are plants grown for aromatic, medicinal, or culinary properties. So for our purposes herbs can be herbaceous like parsley or woody like rosemary.

Soil preparation: This aromatic herb grows best in well-drained, sandy, or gravelly soil and full sun.
Planting: Seedlings grow very slowly, so you'll want to buy plants and start with them for fastest results.

Aromatic, greenish-white blossoms open in late summer to fall. Requires little care except pruning in spring. Can be cut back severely if it is overgrowing the space. Can be trained on a trellis.

One-Seeded Juniper Juniperus monosperma (Cypress-Cupressaceae) has tiny scalelike aromatic leaves and hard, bluish, pea-size berries. It has shreddy bark and a large single seed encased in its berry. Used for food, medicine, construction, and crafts.

Hyssops, an exciting group of aromatic plants, are making a big splash in the plant world. Members of the agastache genus, hyssops are known for their brightly colored flowers and for attracting hummingbirds and butterflies to the garden.

Dill is a carminative, aromatic, anti-spasmodic, galactogogue. Dill seeds contain volatile oils that are believed to calm an upset stomach, reduce flatulence, ease heartburn and soothe colic. Dill leaves have an anti-foaming property.

Agastache rupestris - Sunset hyssop - (Lamiaceae) Aromatic perennials from dry habitats well-suited to xeric gardens. Stiffly erect with opposite, grayish-green leaves.

Like other Agastaches, it has aromatic foliage, too. The leaves have been described as smelling like licorice, mint, or even root beer when crushed.

Fragrant sumac (Rhus aromatica) lights up in fall when its summer foliage turns blazing orange with a hint of red and purple. Grow this 3- to 5-foot-tall shrub in part shade or sun. Zones 4-9.

Sun loving and drought resistant, lavender grows from 1 to 3 feet tall, depending on the variety. The dark purple-blue flowers, gray green leaves and stems have the aromatic scent used in potpourris and perfumes.

Their blooms are lovely and aromatic, and if you're ambitious you can even make jelly from the spent rose hips.

Lateglow - A high-yielding variety . The fruit ripens late and has large berry size. In addition, the fruit is medium-red in color, sweet, juicy, and aromatic.

Thyme (Thymus vulgaris) -Zones 4-9. This dense, low growing ground cover is evergreen and responds well to sandy soils. Both the foliage and the tiny flowers are highly aromatic.

They will form large flat-bladed plants that send up beautiful flower spikes sporting large, round, lavender-pink, aromatic flower clusters by midsummer. Instead of seeds, tiny bulblets form after the flowers.
