After you have finished harvesting your summer vegetables, plant a cover crop of clovers, cow peas, soybeans, or vetches for the purpose of plowing under next spring.
Rye, field corn,field/cow peas and crimson clover can be grown and they grow fast and may be plowed under in a couple months or so. Any time your garden is going to be inactive for six weeks or more, plant a cover crop.
