Days to Maturity - Usually refers to the time from when it is planted outdoors to time of harvest. If you are direct seeding outdoors, as with beans and peas, it means from time of seeding.

Days to Maturity: Approximately 65 to 75 days, depending upon variety.
Harvest "baby" size carrots as soon as they are big enough to eat. After the plants have died off, the carrots do not need to be harvested right away.

The "days to maturity" listings on seed packets, gardening books and seed catalogs are helpful in determining harvest time, but they are not set in stone. Check the garden frequently for ripe produce during harvest time.

In general, heed the "days to maturity" number on the seed packet. Each particular type of squash also has telltale ripeness clues.

To determine when to plant, subtract the number of days to maturity (listed on the back of the seed packet) from the average first frost date in your area.

Remember that the number of days to maturity listed on seed packets is measured from the date of setting out four- to six-week-old seedlings. If you choose to sow seed directly in the garden, add four to six weeks to the expected maturity date.
