Each kernel has its own silk. The ear is not ready to pick until the silks start to dry and turn dark. The ear becomes plumper as each kernel grows and fills with a white "milk".

Eggs of the pecan weevil are deposited in a pecan when the fruit is nearly hardened and contain well-developed kernels (dough state). When fully grown, pecan weevil grubs are about 3/4 of an inch long.

If corn suffers a drought then, you'll end up with only a few kernels on each cob. Use drip irrigation or a soaker hose to get the water right to the corn's roots.

The sugar-enhanced brand is known for the tender kernels and higher sugar content then regular sweet corn, and the conversion of sugar to starch is slowed.

They contain more sugar and when dried, the kernels shrank -- thus the name "shrunken two" (sh2). These high sugar types are 'Supersweet' because the sugar level can be twice as great as normal sugary (su) sweet corn at maturity.

They're sized to hold peanut kernels, sunflower or nyger seed for finches. Experts recommend filling tubes with just one type of seed so birds don't rummage through the contents in search of their favorite treats.

Cut kernels from ears. Dry kernels at 100 degrees (F) for 18 hours or until crisp. To rehydrate, soak in hot water for about 30 minutes and drain. Dried corn works well in casseroles, creamed corn, stews, chowders, soups.

Until the introduction of 'Golden Bantam' in 1902, most sweet corns were white-kernelled.

Corn is at it's best when the kernels have just filled out. It is best to pick corn just before eating. If you need to store it, harvest corn in the morning when it is at it's peak sweetness.

When the nuts are harvested they go to the factory for processing. Once the husk, which makes brilliant compost, is removed, the nut and kernel are left.

'Silver Queen' - Another early producer with pale white kernels and very disease resistant. The new 'Silver Princess" is even earlier.
'Golden Bantam' - An open pollinated heirloom variety, often called the original sweet corn.

I run a rolling pin over the seeds to crack them, then remove the kernels for baking and snacks. I place the hulls in a dry cast-iron frying pan and stir over medium-high heat for a few minutes until they're blackened.

Often eaten as a vegetable with meals, corn is also a versatile grain that can be stored whole, unshucked, shelled (removed from the cob, with whole kernels), or ground into meal for use in making breads or mush dishes like grits.

Harvest corn about three weeks after the silk emerges, or when kernels are well filled and pressure from your fingernail produces a milky liquid. To remove the ear, grasp it firmly, bend it toward the ground and pull with a twisting motion.

Grow garden plants or set up feeders that offer birds a nice arrangement of seeds: sunflowers, yellow millet, suet, cracked corn, thistle, and peanut kernels.

Perlite is made from crushed lava that has been heated until the particles "pop" into white, sponge-like kernels. It is used to retain water and provide good aeration. Perlite is sterile and pH neutral.

More specialized tools include corn cutters which remove kernels from the cob, bean Frenchers and shellers, cherry pitters, strawberry cappers, apple corers and peelers, jelly strainers and thermometers, and many more.

Corn is ready when the silky tassels at the end of the cobs turn brown, but check by carefully peeling back the leaves and pinching a kernel.

Plant corn in a good rich soil. They should be planted in rows at least 4 ft wide and 4 ft long for good pollination. Harvest sweet corn when the silk turns brown and you can feel well formed kernels under the husks.

If kernels near the tip are swelling, the corn is at its peak flavor. Pick it, submerging it immediately in ice water, then cook it right away - each hour after harvest some of its sugar turns to woody-tasting starch.
