For best results, wrap underripe fruit lightly in newspaper and store stem end down in a dark, dry, cool place (60° to 70°F). Check often.
Tomatoes taste best at room temperature.

 


Slightly underripe vegetables are usually better for freezing, but overly ripe and mature produce should usually be thrown in the compost pile.

Quinces are pectin-rich, too. Fruit, generally speaking, has more pectin when slightly underripe; so another approach is to include some underripe fruit (usually a quarter of the total) along with the ripe.
