Achar is a Hindi word which means 'pickle.' Pickled fruits and vegetables are an important part of the cuisine of many nations, since they extend the shelf life of produce.

Pickled unripe mangoes are a common Indian condiment (aam ka achar [आम à¤-ा अचार]) that is served all over North India, particularly together with simple meals of rice and cooked legumes (dal [दाल]).

In the Philippines, they also have pickles called "achara" which is made from slices of green papaya, shallots, cloves of garlic and vinegar.
