Active dry yeast is a type of yeast used to rise dough for baking bread, rolls, a few types of cake, and for any type of risen bread. Yeast is essentially tiny, living cells, and the specific yeast used in active dry yeast is Saccharomyces cerivisiae.

Active dry yeast is in the form of tiny, dehydrated granules. The yeast cells are alive but dormant because of the lack of moisture. When mixed with a warm liquid (105° to 115°F), the cells once again become active.

Active dry yeast, used to leaven dough, is sold in packages containing 2 1/2 teaspoons (1/4 ounce/7 grams) and in bulk. Quick-rising yeast works in about half the time required for regular yeast. Also available in fresh cakes.

In bread machine pain, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available.

In other recipes, active dry yeast can be added with the flour to the warm water/sugar mixture. Quick-rising yeast is also active dry yeast, but it has been formulated to raise the dough in one-third to one-half the time.

The carbon dioxide produced by yeasts is what gives champagne and beer their effervescence, and cause bread doughs to rise. Active dry yeast and compressed yeast are the forms most commonly used for leavening.

It is a living plant, which grows in warm moist doughs, causing those doughs to rise. Yeast comes in two forms, active dry yeast, and compressed yeast. Home bakers will almost always be using dry yeast.
