Adobo Sauce:
A tangy sauce whose basic ingredients include vinegar, soy sauce, garlic, pepper and chiles. Adobo is a national dish in the Philippines.

Adobo sauce may be used as a condiment or as a marinade. One popular recipe involves using chipotles in adobo sauce.

Adobo Sauce
A sauce or paste of Mexican origin made with ground chile peppers, sesame seeds, peanuts, bread or crackers (wheat flour, salt, and corn starch), sugar, vinegar, garlic, pepper, and other spices.

1 7 ounce can chipotle peppers with adobo sauce
1/2 cup extra virgin olive oil
4 cloves garlic
juice of one lime
2 tablespoons cumin seed
1 teaspoon oregano or marjoram
1 teaspoon salt
1/2 teaspoon black pepper
1/8 cup tequila
1/4 cup cilantro leaves ...

It is sold either dried or canned with adobo sauce. Most of the natural heat of the jalapeno is retained in the process. Chipotle peppers are very hot, and they can easily over power dishes and recipes.

Prepare as above, except stir 1/4 cup shredded smoked cheddar or Monterey Jack cheese (2 ounces) and 1 teaspoon finely chopped chipotle pepper in adobo sauce into potatoes before serving.Per 3/4 cup: 215 cal.

Chipotle Chili in Adobo Sauce adds a nice smoky kick but still a good chili if you don;t have this ingredient on hand. I use Tomato sauce but any type of tomato will do. Diced, crushed, whatever you prefer or have on hand.

I also made an incredible glaze for some grilled baby back pork ribs by mixing a couple shots of bourbon with 1/2 cup syrup, 2 chipotle chilies (canned in adobo sauce) and half a cup of peach nectar, then reducing by 1/3.
