Allumettes - cut into matchstick sizes and shapes. Also, a puff pastry used for hors d'oeuvres.

 


Allumettes - [French] Vegetable strips, matchstick-size in length and width.
Almandine - [French] made or garnished with almonds. An alternate spelling is Amandine.
Almejas - [Spanish] clams.

pommes allumettes: very thin fries 1/4 x 2-1/2
pommes boulangère: potatoes cooked with the meat; gratin with onions, sometimes bacon
pommes dauphinoise: basked dish of sliced potatoes w/milk, garlic, cheese ...

baton, batonnet (Fr. ) Shaped like a little stick; vegetables such as potatoes cut in this manner are generally larger than allumettes or julienne.
