information
Nuts that can be bought as skin-on, blanched, whole, halved, flaked, chopped or ground. Used in sweet or savoury dishes, especially those with an Arabic influence. There are two main types of almonds - sweet and bitter.

Almondine is a culinary term indicating a garnish of almonds. The French term is amandine, but the 'almondine' spelling is probably more common in America.

Almond milk is a milk substitute created by finely grinding almonds together with water. It enjoys a long history as a popular food. Medieval European recipes frequently called for almond milk.

Almond flour is simply ground blanched almonds. Recipes dating back to medieval times call for it as a thickener, a replacement for wheat flour, and a base for cakes and puddings.

almond extract Notes: This is made with almond oil and alcohol, and it's especially good in cookies and cakes. It's potent, so recipes usually call for no more than a teaspoon. Bitter almond extract is even stronger.

Almond paste is a pliable paste made from blanched ground almonds, sugar, and glycerine or other liquid. Almond extract is often used to intensify the flavor. It is used in pastries as a flavoring agent and for decorative work.

Almonds (toasting): Place 1/2 to one cup slivered or sliced almonds in a 2-cup microwave-safe measure. Microwave, uncovered, on 100 percent power (high) for one minute; stir. Microwave 1 1/2 to three minutes more, stirring every 30 seconds.
