Amatriciana Sauce
Originating in a region of central Italy from a town known as Amatrice located near the Adriatic Sea coast, this sauce is a type of pasta sauce known for its meaty contents.

Alla Gricia (It.): this sauce is the "white" version of amatriciana, another Latium sauce that hails from the town of Amatrice in the province of Rieti; gricia stayed closer to its tomatoless roots, while amatriciana adopted a sporty red coat.

One of the classic dishes containing bucatini pasta, Bucatini all'Amatriciana, is made with bucatini and a hearty tomato sauce with large chunks of pancetta or bacon.

The classic sauce for these hearty pastas is all'amatriciana, a spicy sauce featuring tomato and pancetta (or bacon).
