Arak
Liquor, Wine
Shaoxing or Chinese Cooking Wine is the wine most commonly used when a dish requires wine in its recipe. Cognac, preferably Cognac X.O. is the liquor of choice for use in some Chinese gourmet dishes.

Arrack/Arak/Raki - strong liquor distilled in North Africa and in Arab lands. It is drunk in very small portions.
Arrowroot - A flour used to thicken clear liquids because it does not cloud.

arak (Mid. E.) A liqueur made from various plants; strong and anise flavored.
arancia (It.) Orange.
Arborio rice (It.) Short, fat grained Italian rice that is perfect for risotto and similar moist rice dishes.

arrack (Ah-RAK) - Also called arak. It is an anise-flavored liqueur, often homemade. It's a popular aperitif in the Middle East. It is a distilled from grapes, dates, and other fruits.
