Although the season is very short, British asparagus is well worth the wait for its unbeatable flavour and freshness.

Asparagus are the growing shoots of a fern-like plant. Asparagus has a delicate flavor and diuretic properties.

Asparagus is a vegetable that has been in cultivation for millenia. The Greeks and Romans ate and enjoyed asparagus, and the vegetable has also been immortalized in the hieroglyphs of ancient Egypt.

Asparagus are one of the quintessential spring vegetables. They appear earlier but they peak in May so this favorite American vegetable (Broccoli came in #2) is showcased this time of year.

Cut Asparagus into 5 mm thick rings, put it in boiling water for 2 minutes.
Drain and keep it aside.
Fry red chillies and methi seeds lightly and grind it with grated coconut.
Put very less water along with garlic. Put little oil in a frying pan.

Lay asparagus in a single layer on a cookie sheet and roast in a 350°F oven for 30-35 minutes.
Squeeze lemon over asparagus, sprinkle with chopped tarragon, and serve.
