Baking Soda:
A leavening agent which is used as an essential ingredient in baking powder. When used alone as a leavener, recipes must include some type of acid to neutralize the resulting sodium carbonate in the finished product.

Baking soda is a chemical, sodium bicarbonate, also known as bicarbonate of soda or NaHCO3. It reacts with acid to produce carbon dioxide gas; this reaction is the reason for its usefulness in baking as a leavening agent.

Baking soda/Sodium bicarbonate
An alkali produces carbon dioxide when mixed with an acid and therefore rising will occur. Most recipes which use baking soda will also contain an acid ingredient such as buttermilk or molasses.
