Balsam Pear A long, green, shiny, slightly sour fruit that resembles a cucumber with bumpy skin. Bamboo Shoots Tender spear-shaped shoots from the base of bamboo plants often used in stir fried dishes to provide texture.

Bitter Melon or Foo Gwa - Also known as Balsam Pear, this is a very strange looking gourd, shaped something like a cucumber with a rough, pockmarked skin. The flavor is unusual as well - like cilantro, it's an acquired taste.

The scientific name for bitter melon is Momordica charantia, and the plant has a number of common names including balsam pear, bitter gourd, and ku gua.

The EPA would also include crookneck squash, scallop squash, spaghetti squash, Chinese okra, bitter melon, balsam pear, balsam apple, Chinese cucumber, and chayote. Some of these squash are available at all times of the year.
