BEAN (a common Teutonic word, cf. Ger. Bohne), the seed of certain leguminous plants cultivated for food all over the world, and furnished chiefly by the genera Vicia, Phaseolus, Dolichos and others.

Mung bean sprouts originate in Asia, where they have been made and used for thousands of years.

Broad bean plants started under glass or over-wintered in a protected location are ready for harvest in mid-spring. For normal crops the season starts at the end of spring and lasts through the summer.

The green bean was introduced to the Mediterranean upon the return of Columbus from his second voyage to the New World in 1493. In Columbus's diary from November 4, 1492 he describes lands in Cuba planted with faxones and fabas "different than ours.
