The young sprouts of the mung bean, the plant which also produces the product from which soy sauce and soya protein are derived.

 


Add bean sprouts, soy sauce, sugar, and pepper to the hot wok. Stir-fry for 1 to 2 minutes or until bean sprouts are crisp-tender. Return the zucchini mixture and the mushroom mixture to the wok. Cook and stir gently until heated through.

Bean sprouts are the tender edible shoots of germinated beans. Most people think of mung bean sprouts when bean sprouts are mentioned, but a wide assortment of seeds, nuts, grains, and beans can be sprouted.

Most beans can be used to produce bean sprouts, usually mung beans, green or brown lentils, aduki beans and soya beans are used. Taking between two and five days to germinate. They are usually added to salads and stir - fries.

Bean Sprouts:

Bean sprouts: the young sprouts of the germinating mung bean. Bean sprouts are used extensively as a vegetable in Chinese cooking and can be easily obtained fresh from most western supermarkets. The crisp bean sprouts are used raw in salads too.

Summer kin chi is made with daikon, cucumber, bean sprouts and other available greens and is less salty, often slightly sweet and lightly vinagared. It is eaten fresh and is not fermented.

Singaporean laksa is made of boiled meat (chicken is most common), sea food (fish, crabs) and a variety of vegetables (bean sprouts, celery stalk, cucumber).

They may be fermented to produce soy sauce, natto, miso, and tempeh. Soy beans may be used to produce bean sprouts that are larger than the normal ones produced from mung beans.
