Beet chips are a great way to add a new twist to casual dinners, as well as provide a snack that contains a little less of the calories and carbohydrates that many people try to keep in check.

Swiss chard is really a beet, but resembles dark cabbage leaves. Rainbow chard is currently available in many markets. The leaves remain green, but the stalks can be pink, red, gold or purple.

Swiss chard, also known as chard or silver beet, is a leafy, dark green vegetable, related to the beet, with thick, crisp white or red stems and ribs. Young leaves, trimmed from the stems and ribs, are used raw or cooked.

The most famous food-foams are foamed espresso (Èspesso), foamed mushroom and foamed beet. An espuma or thermo whip is commonly used to make these foams.

Pfefferpotthast: a beef short-rib stew with onions, knob celery, and carrots all browned in bacon fat. Served with potatoes and beet salad in the winter but with a fresh salad of lettuce, tomatoes, and cucumbers when they are available.
