Slice bitter gourd into thin discs. Soak in sour buttermilk for 4-5 hours.
Drain, wash, sprinkle liberally with salt. Keep aside for 1 hour.
Rub slices well with hand, wash and drain.

Karela Chips: Bitter gourd diced and fried and then covered in brown sugar.
Karhi (Pakistani): Yogurt dumpling served with white rice.
Kari Ayam (Malaysian): Chicken curry, served best with rice or roti canai.

The scientific name for bitter melon is Momordica charantia, and the plant has a number of common names including balsam pear, bitter gourd, and ku gua.
