Black-eyed peas or black-eyed beans are a subspecies of the cowpea and were first grown and relished in Asia.

1 cup dried black-eyed beans, soaked overnight and pressure-cooked
2 tbsp oil
2 onions, chopped fine
2 tomatoes, chopped fine
6 flakes garlic, chopped fine
1 small piece ginger, made into a paste
¼ tsp turmeric powder
1 tbsp tamarind pulp ...
