Black currant liqueur is a sweet alcoholic beverage made from tiny black berries that are related to the gooseberry. The most familiar, and best, black currant liqueur is from France called creme de cassis.

There can be perceived good and intense aromas of black cherry, black fruit, raspberry, blueberry, black currant and hints of violet. The attack in the mouth is pretty crisp, well balanced by alcohol and tannins.

cassis (Fr.) Black currant; a liqueur made from black currants is called creme de cassis and it is used alone or mixed to make aperitifs such as Kir-white wine colored with a few drops of cassis-or Kir
royale, made with Champagne.

Characteristics: As a vintage, produces a pleasant red wine with flavors of black currant, fruit, floral, plum, spice, and oak with gentle tannins. As a varietal, produces a light red wine with the aroma and flavor of blueberries.

Occasionally grenadine will also combine black currant juice with pomegranate juice and sugar. Most bartenders recommend finding a good fruit juice based grenadine instead of resorting to ones made from artificial flavors and colors.

Fruit vinegars are made from fruit wines without any additional flavouring. Common flavors of fruit vinegar include black currant, raspberry, and quince. Typically, the flavors of the original fruits remain tasteable in the final vinegar.

Traditionally this torte consisted of a crust made with flour, ground nuts (traditionally almonds), sugar, egg yolks, spices and lemon zest that was filled with preserves (traditionally black currant) and then topped with a lattice crust.

Crème de Casis A sweet cordial from black currants. Popular as 'kir' when mixed with white wine. Crème fraîche This matured, thickened cream has a slightly tangy, nutty flavor and velvety rich texture.
