Blini:
A small pancake made of buckwheat flour and leavened with yeast. These pancakes are often brushed with large amounts of melted butter and served with caviar and sour cream. Other versions may be made of vegetable purees or semolina flour.

Traditional Blini are tiny buckwheat pancakes that have earthy, yeasty flavor. They are a natural accompaniment to caviar and champagne.

Traditional accompaniments, inspired by the Russians, are sour cream, blinis, and ice cold vodka. Lemon and minced onion are often served with caviar, but their flavors will only detract from the pure delicate flavor of the caviar.

In Russia, buckwheat flour is added to the batter for pancakes called blinis which are frequently eaten with caviar. Buckwheat flour is also used to make Breton crepes called galettes.

What to Serve - The classic accompaniments are toast points, potatoes & blini (small pancakes). Sometimes you will find creme fraiche served too. I suggest "less is more".

The blintz originates in Russia, where it may also be called blin or blini. The pancake is much like a crepe, but is cooked twice.

Batter is cooked either on a hot griddle or in hot fat in the oven to make pancakes, Yorkshire pudding, blinis, clafoutis, waffles or Scotch pancakes.
