A bone in ham can come in a number of forms. A classic whole bone in ham can be quite large and extremely heavy, since it consists of the entire upper fleshy portion of the leg, with the ankle and foot removed.

Pull out the bone in one or two pieces.
Insert the tip of the knife under the long rib bone. Resting the knife against the bones, use steady and even pressure to gradually trim the meat away from the bones.

A turkey breast roll comprises two turkey breast fillets that have been removed from the bone in one piece, flattened slightly, stuffed and rolled. Lean and easy to carve, it requires 28 minutes per kilo to cook.
