Brandy is a grape-based spirit which is distilled from wine. It is a popular after-dinner drink and the best types, such as Cognac should not be mixed.

 


Brandy
An alcoholic beverage distilled from wine or fermented fruit juices. The highest quality brandies are referred to as either Cognac or Armagnac, both named for the regions in France where they were first produced.

Brandy is grown throughout the world, since it is an obvious extension of the wine industry and wine grapes are such a massive crop.

Brandy is often served as an after-dinner drink, or added to coffee. There are two highly regarded French brandies: Cognac and the slightly drier Armagnac. California also produces many fine brandies that are similar to cognac.

Brandy (short for brandywine, from Dutch brandewijn - distilled wine) is a general term for distilled wine, usually 40-60% alcohol by volume.
It is also used to indicate spirits distilled from other fruit, for instance plum brandy.

Brandy:
1/4 cup apple juice plus 1 Tbsp brandy extract or flavoring.
Rum:
1/4 cup apple juice plus 1 Tbsp rum extract.

A brandy distilled from apples and made in the Normandy region of France. Applejack is a good substitute.
Calzone
A stuffed pizza, folded over and baked, like a Cornish pasty. A calzone is usually made as a single serving.

An apple brandy from Normandy, France made from cider that has been aged for up to two years and distilled.

Split several vanilla beans lengthwise, stuff them into a tall bottle, and cover with a neutral-tasting alcohol (vodka or Everclear) or brandy.

To pour alcohol, such as brandy or fortified wine, over food and set it alight. This gives flavour to the dish, reduces the alcohol content of the spirit and also provides a dramatic effect.

Eau-de-vie
Clear, dry, fruit brandy which is higher in alcohol than liqueurs. The finest come from Alsace, France, southern Germany and Switzerland.
