Broiler pan

Gastronomy BroilBroiling

A broiler pan is a pan specially designed to use in the oven for broiling. A broiler pan comes in two pieces, a slotted upper pan and a deeper, solid lower pan called a drip pan.

Broiler pans with racks are usually supplied with home ovens by the manufacturer. The slotted rack that sits on the pan allows juices and fats to drip away from food as it broils and to collect in the pan below.

Place bird, breast side up, on a broiler pan or wire rack of roasting pan.

Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat until no pink remains, turning once. Allow 10 to 12 minutes for 1/2-inch-thick patties or 15 to 18 minutes for 3/4-inch-thick patties.

A. To broil: Place meat on the rack in the broiler pan. Line the pan with aluminum foil for easy clean-up.
B. To grill: Place meat on the grill at the recommended distance from heat (check your recipe for specific instructions).

Broiler directions: Place salmon on oiled broiler pan, broil 4 to 6 inches from heat for 10 to 17 minutes or until fish flakes. Turn once.
