Bromated flour is flour which has been enriched with potassium bromate, a maturing agent which promotes gluten development in doughs.
Bromated flour: This is a flour with a maturing agent added. The agent's role is to help with developing gluten, a role similar to the flour bleaching agents. Bromate is usually used. Other choices are phosphates, ascorbic acid, and malted barley.
Bromated Flour: Flour with potassium bromate added as an aging agent; the label must state that the flour is "bromated." Potassium bromate is currently under examination and is expected to be outlawed in the United States.
