At the 30-minute mark, using a bulb baster, baste the turkey through the cheesecloth with some of the broth mixture. Continue roasting, basting every 20 minutes, for 1 1/4 hours.

Common tools used for skimming are bulb basters, ladles and spoons. When fat cannot be easily skimmed, it can be poured into a separator which will hold the contents to allow the fat to accumulate on the surface while the juices accumulate below.

This may be accomplished by using a spoon or a bulb baster to suck the fat off the surface. If time permits, another way to remove the fat is to chill the liquid so that the fat congeals at the surface making it much easier to remove.

If you want to get creative, add some seasoning or flavorings to your base liquid before basting. A bulb baster is an inexpensive specialized utensil that suctions the liquid in the pan and allows you to squeeze it onto the food.
