Button mushrooms tend to refer to a specific size but they are not the only mushrooms that are A. bisporus. For instance, Portobello mushrooms are merely large, brown versions of the button mushroom, as are smaller Italian brown mushrooms.

Button mushroom - This is the standard, white, cultivated mushroom. Button mushrooms work well in concert with "wild mushrooms," which are more intensely flavored, but also more expensive.

Button mushrooms are mild-flavored cultivated white mushrooms in their smallest form, with their caps still closed. Select firm, plump mushrooms that are not slimy or bruised.

Tastier cousins of the lowly white button mushroom, cremini or crimini mushrooms sport deep brown caps and have a meatier flavor and texture than their paler kin.
