Eating cannoli is almost as much art as preparing them. It's best to eat them almost immediately after the shells are cooled and filled.

 


Cannoli: The original cannoli is a Sicilian pastry made by stuffing cylinders of fried dough with sheep’s milk ricotta flavored with sugar, pieces of candied fruit, and bits of chocolate. That was served as a carnival dessert.

Cannoli shells are delicate, deep-fried tubes about 4 inches (10 cm) long, used for desserts and stuffed with various fillings. The traditional southern Italian dessert called cannoli is filled with ricotta and candied fruit peel.
