Cardamom is one of the world’s very ancient spices. It is native to the East originating in the forests of the western ghats in southern India, where it grows wild. Today it also grows in Sri Lanka, Guatemala, Indo China and Tanzania.

Cardamom is typically sold in seed pods, or with the seeds removed from the pods (decorticated) or with the seeds ground to a powder, which is the most common form. Pods have the texture of tough paper and are available whole or split.

Cardamom was known in Ancient Greece as an expensive item of commerce and known as kardamomon [καρδάμωμον] (kardomeia [𐀏𐀅-𐀊] on the Linear B tablets).

Cardamom The pods of an aromatic Indian plant is a member of the ginger family. The seeds of the pods are dried and used as a spice. It is a very expensive spice. cardamom is used mostly in Indian and Scandinavian cooking.

The many spices (most entered separately) include turmeric, cumin, coriander, fenugreek, fennel seed, saffron, mace, nutmeg, cardamom, clove, cinnamon, poppy and sesame seeds, tamarind, onion, garlic, and chilies. See also garam.

The spice mix used to flavor the dish is a combination of seeds (coriander, cardamom, cumin, black mustard, fennel, wild onion, and fenugreek). It can be made as either a masala paste or used dry.

Curry A spicy powder made by grinding and blending various herbs and spices, including cardamom, cinnamon, cumin, cloves, fenugreek, red peppers, and nutmeg.

Put red chilies, cinnamon, cumin, cardamom and cloves in a grinder and grind finely.
Keep chicken in a big bowl and put 1 tsp grated ginger, ½ tsp garlic and half the dry spice mix on the chicken.

Mix the black pepper, salt, cinnamon, cumin, paprika, cardamom, turmeric and ginger. Sprinkle half of the mix liberally over the chicken breasts and place them on a cooking sheet that has been greased with cooking spray.

One spice, cardamomum, has an unsure identity because it clearly is not the cardamom we know today, and two cannot be identified--bdellium and comacum. Not one of these spices is associated with Meccan trade items.

A mixture of dry-roasted, finely ground, cumin, coriander, cloves, cinnamon, cardamom, dried chiles, fennel, mace, black pepper and possibly other spices. Garam masala is similar to curry powder and is used widely in Indian cooking.

If you're out of cinnamon and don't have any allspice handy, try using cardamom (a spice closely related to ginger). Of course, cloves and nutmeg also work well.
