The cashew is a distant relative of the pistachio and mango and is grown mainly in Brazil and India. It is often roasted in salt to bring out the flavour.
Seasonal availability: Kernels available all year.

Cashews are the seeds of the cashew tree, Anacardium occidentale, native to Brazil. The seeds are often mistakenly classified as nuts, and most cooks treat cashews like nuts, especially since they behave like nuts in the kitchen.

Cashews - Cashews are a smooth, tan-colored, kidney-shaped nut. The hard shell of the cashew is toxic and that is why they are sold shelled. The toxic oil is destroyed when the nuts are bleached or roasted.

Cashew nuts grow dangling beneath a fleshy stalk known as the cashew pear. The 'pear' can be used for juices, syrups and liqueurs. Cashew nuts are eaten on their own as a snack or as an ingredient in various sweet and savoury dishes.
