Castor sugar is known as superfine sugar in the United States. Because it dissolves more quickly than standard granulated sugar, it is used mainly in applications where this is desirable.

 


Castor or caster sugar is the name of a very fine sugar in Britain, so named because the grains are small enough to fit though a sugar "caster" or sprinkler. It is sold as "superfine" sugar in the United States.

Castor or Caster Sugar is white sugar with a superfine grain, which allows it to dissolve almost instantly. Caster sugar can be substituted for white sugar in a direct one to one ratio.

Method :
Slice the litchis, add castor sugar and stew them over a slow fire, until soft and pulpy. Strain and cool.

It is also sometimes seen spelled as castor sugar, and it may be labeled as 'superfine sugar' as well. Much like regular table sugar, caster sugar can come in both refined and unrefined forms.

Description: I've never heard of these being used as an ingredient in cooking, but they are an important emulsifier in processed foods and might be worthy of further research.
