Celery:
developed in 16th-century Italy, this vegetable (Apium graveolens) grows in bunches of long stringy curved stalks or ribs surrounding a tender heart; can be eaten raw, cooked or used as a flavoring.

Celery is a green vegetable. Usually the long crunchy stalks are eaten, but people also eat the leaves and main root. Celery is very low in Calories, high in water, and high in salt.

Chop the celery until very fine. The bell pepper, pecan and green onions should be chopped but not as fine as the celery and jalapeno. The key is to have different ingredients in different sizes so that each item packs the right punch.
