Celery seed is the seed of plant closely related to celery, cultivated specifically for its aromatic, flavorful seeds. It can be found as an ingredient in spice mixes all over the world, and is also available plain in whole and ground form.

Celery seed is the tiny dried head of a wild celery called Lovage. Celery seed is used in pickling and to add celery flavor to soups, sauces, meat and vegetable dishes. It has a strong flavor and should be used sparingly.

celery seed - Celery seeds are the fruit of a plant related to the parsley family and are not to be confused with the plant we recognize and serve as a vegetable. They are now grown extensively in France, Holland, India, and the United States.

Celery Seed is the dried fruit of Apium graviolens, a biennial in the parsley family. This is the same genus and species used for growing table celery, although there are particular varieties that are used for the vegetable.

Celery seeds are tiny globular seeds that are sold whole, slightly crushed, or ground. The leaves, which are light green, are used whole (fresh or dried), flaked, or ground. The stalks or stems and root are sold fresh.

To make a Creole Rub, combine 2-1/2 tablespoons of paprika with 2 teaspoons each of white pepper, dried oregano, dried thyme, 1 teaspoon each of cayenne, ground celery seeds and salt, 3 tablespoons of grated onion and 2 minced garlic cloves.

The seed of the wild celery called "lovage," most of which is grown in India. Because of its strong flavor, it should be used sparingly. Used in soups, salads, and meat dishes.

Native to Middle Eastern countries such as Afghanistan, Egypt, India, Iran and Pakistan, ajowan seeds are similar to celery seeds in appearance and provide a distinctive flavor that is very close to the taste of thyme.

Stir together mayonnaise or salad dressing, vinegar, sugar, celery seeds, and salt in a large mixing bowl. Combine green cabbage, red cabbage, and carrot in bowl; toss gently to coat. Cover and chill before serving. Makes 6 servings.
