What's the best/easiest way to cook chicken breast for recipes that call for shredded chicken?

Stuffed chicken breasts are delicious! Filled with cream cheese, herbs and spices, they are (normally) anything but light or healthy.

Besides skinless, boneless chicken breasts, other popular poultry favorites are chicken quarters and skewered chunks. Some people even cook up an entire turkey on their backyard grill.

Slit a pocket lengthwise in each chicken breast. Fill each pocket with the mushroom mixture. Secure the slits with tooth-picks.
Combine the spring onion, lemon juice, garlic salt, pepper and olive oil.
