Chinese date (fresh) = jujube (fresh) Notes: These are usually dried, but you can sometimes find fresh dates in late summer and fall. When you get them home, let them ripen on the counter for awhile until they become soft and sweet.

 


It should be roasted using the wood of the Chinese date tree. Often erroneously served with Hoi Sin sauce, it should in fact be served with Duck Sauce.

It is sold both fresh and dried, with the dried version sometimes called a Chinese Date, due to its sweet granular texture and single seed.

Jujube - the edible fruit of a tropical plant also known as the Chinese date. Also, a chewy gelatin candy.
Julienne - to slice food into very thin shreds or strips.

A reddish-coloured, oval-shaped fruit with sweet white flesh. Also known as jujube or Chinese date, they are available dried, candied or fresh from Asian supermarkets.
