Chow mein does have its roots in Chinese peasant cooking, with its emphasis on vegetables and stir-fry preparation. However, it has been somewhat westernized by Chinese cooks who realized most Americans wouldn't touch what native Chinese people eat.

Chow Mein - A Chinese-American dish consisting of stewed vegetables and meat with fried noodles. It comes from the Mandarin Chinese words ch'ao mien meaning "fried noodles.

Chow Mein Noodles:
Yellow noodles made from wheat flour and possibly with egg, packed in cakes or bundles. Traditionally served with the Chinese-American dish of poultry, shrimp and/or meat, vegetables and other ingredients.

Chow mein (also known as chao mian in Chinese-speaking communities) is a generic Chinese term for a dish of stir-fried noodles, of which there are many varieties.

This gives the noodles more flavor than is the case with chow mein, where the meat and vegetables are served over noodles that have been cooked separately. Italian pastas such as fettucine work well in lo mein recipes.
