Civet - A French term for a well seasoned stew of game, usually hare, or rabbit.

Civet - A French stew usually containing game, though duck and goose are used. The meat is marinated in red wine for long periods of time, then stewed with pearl onions and bacon.

One common traditional dish that involves jugging is Jugged Hare (known as civet de lièvre in France), which is a whole hare, cut into pieces, marinated and cooked with red wine and juniper berries in a tall jug that stands in a pan of water.

The reason for this is that the Civet cat chews on the ripe cherries and the stone, or coffee bean, is retrieved by farmers once it has taken its natural course through the cat.
