Take pointed clam knife in one hand and thick towel or glove in the other. With towel, grip shell in palm of hand.

Any clams with partially opened shells, or heavier shells are probably dead and should be discarded. A clam knife is used to open the shell and release the meat from its attachment to the top shell.

Clam knife: kitchen utensil that is used to pry open the hard shell of a clam or an oyster in order to remove the meat. Typically, the knife will have a rounded, short blade with beveled edge that can be inserted into the tightly closed shell.
