Cocoa is both a powder crushed from the beans of the tropical American cacao tree, and the hot drink made from it.

 


Alkalized Cocoa Powder: A Dutch-Processed Cocoa Powder that is treated with an alkali to neutralize its acids.

Cocoa powder:
Unsweetened powder made from cacao beans that are fermented, dried, roasted, and cracked. The nibs (small pieces) are ground to extract about 75 percent of the cocoa butter - a thick paste which is called chocolate liquor.

Cocoa powder - The dried powder formed from chocolate liquor after the cocoa butter has been removed. This mixture is then dried and ground into a fine powder.

Cocoa Powder - This is the dried powder formed from chocolate liquor after the cocoa butter content has been reduced. This mixture is then dried and ground into a fine powder.

Cocoa Powder - Cocoa powder is made when chocolate liquor is pressed to remove three quarters of its cocoa butter. The remaining cocoa solids are processed to make fine unsweetened cocoa powder.

Cocoa Powder - a brown, unsweetened powder produced by crushing cocoa nibs and extracting most of the fat (cocoa butter); it is used as a flavoring; also known as unsweetened cocoa.

Dutch Cocoa Powder
Dutch process chocolate is chocolate that has been treated with an alkalizing agent to modify its color and give it a more mild flavor. It forms the basis for much of modern chocolate candy.

Dutch process cocoa powder:
Treated with an alkali to neutralize its naturally acidic taste, making it a little more mellow than American cocoa powder; intense flavor. (See Cocoa Powder)

Dutch cocoa powder: an alkalized cocoa. It has an intense flavor. Droste and Van Houten are good and widely available brands.
Dutch oven: a cast iron pot with a tightly fitting lid used to braise and sometimes to bake.

In a mixing bowl, put 1 cup of fine powdered glucose biscuit, 1 cup of fine sugar powder, 4 tbsp of cocoa powder & mix well.
To this fine mixture, add little by little coffee decoction & make it into a dough.

Sift together the flour, cocoa powder, baking soda, and salt onto a sheet of waxed paper. In the work bowl of a stand mixer fitted with the paddle attachment, beat together the butter, shortening, and brown sugar on low speed until just combined.

The cocoa butter in solid chocolate -- the other component being cocoa powder -- is the difficult diva. Cocoa butter melts at about body temperature (which you already knew if you've ever held an unwrapped chocolate bar in your hand).

In a resealable plastic bag, combine the flour, cocoa powder, chili powder, baking powder and salt and shake together to mix. Whisk the eggs, 1 at a time, into the barely warm chocolate mixture. Add the flour mixture and stir until smooth.

Pulses, seeds, dried fruits, packet mixes (like stuffing and soups) and jelly, coffee beans and cocoa powder are other good basics to keep in stock.
